Lori's eyes were opened several years ago by the books "The Omnivore's Dilemma" and "In Defense of Food" by Michael Pollan. The latter book propelled her to explore the food we eat and its connections to health and healthcare. The state of the U.S. food industry-- with its reliance on large corporations, animal feedlots and crop monocultures-- convinced her of the necessity to build personal and community self-sufficiency and to advocate for the local food economy. Lori currently is focused on permaculture, sustainable agriculture, food security and food/nutrition.
